A healthy dinner works with a good workout. Cauliflower rice pilaf with lentils fried onions and burst tomatoes. Start off with one large cauliflower, about 2 pounds cut into florets. 3 tablespoons olive oil, divided, one large sweet or white onion cut in half and slice very thinly, 1/2 cup dried brown lentils, rinsed, 1 teaspoon ground cumin, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground allspice, 1/2 teaspoon salt, ground pepper, 8 ounces cherry tomatoes, 1/4 loosely packed mint leaves, roughly chopped. Make the cauliflower rice. Add the florettes to a food processor and pulse until you have fine crumbs with a rice like consistency. One medium large cauliflower should make about 3 cups of riced cauliflower. Set aside. In a large skillet over medium heat, add 2 tablespoons of oil and the onion. Cook the onion until it softens, reduces in size and becomes a deep golden and slightly charred color, about 10 to 15 minutes. Keep an ion it so it doesn’t burn too quickly. Once done, transfer the onion to a plate and set aside. As the onion browns, cook the lentils in a medium size pot with 2 cups of water. Bring the lentils to a boil then reduce the heat and continue cooking until the lentils are tender but not mushy, about 15 to 20 minutes once done, drain and set aside. Using the same skillet you cook the onions in, add the riced cauliflower and season with the cumin, cinnamon, allspice, salt and pepper. Toss to combine and cover the pan with a lid, cooking the cauliflower for 6 to 8 minutes until tender stir in the lentils and the caramelized onions. Add 1 tablespoon of oil to a small skillet and bring to medium high heat add the tomatoes and a pinch of salt and cook the tomatoes until they begin to burst and soften.
