First try at home of Roman style pizza 'al taglio'. Made with a 'biga Giorilli' (see photo 3) from the amazing website of @italianpizzasecrets 🤌 The biga was first cold-proofed 24h in the fridge and then 24h at room temperature. Good food needs time.⏳ I used high protein floor (13,6%) and a hydratation of 80%. 💦 The total percentage of biga on the total dough is 45%. It gives a nice complex taste and helps the proofing. Next time, I'll try 55%. I'm satisfied about the taste and proofing, but the crust could be better (that amazing 'crack!' you get from perfect al taglio). Vegan cherry mélo-cake in the making. To make the marshmallow, I made a vegan version of gelatine by combining starch, agar and pectine.
