Thai inspired dinner on the grill. Of course it can be done!
1 pound Swift ground pork
1 bag of broccoli slaw
1 cup of sweet peppers sliced
1 small onion diced
4 TBL red curry paste
1 TBL Chili sauce (optional) I used Sriracha
3 TBL peanut butter stirred into 1/2 cup chicken broth
1 TBL fish sauce (optional)
1 tsp salt
1 chopped jalapeño (optional)
1/2 cup chopped cilantro
Lime cut into pieces
Heat wok or large frying pan on your grill or stovetop with 2 TBL high heat cooking oil. Add crumbled pork and cook, stirring constantly, add salt, fish sauce and curry paste, stirring to incorporate. Add all vegetables and cook for 2 minutes. pour in your broth mixed with peanut butter stir till incorporated and stir in coconut milk and chili sauce.
Perfect with rice or noodles. Garnish with fresh cilantro and a lime wedge for squeezing. Serves 6

A smash burger style burger with no bun using @swift__meats ground pork will be your new favorite. 🤫 but you can put it on a bun if you want too, I won’t tell anybody!
Flying Pig Sauce:
1/2 C Mayo, 2 TBL Sweet Relish, 2 TBL vinegar based BBQ sauce (I used Blues Hog TN Red) 1 tsp BBQ Pork Rub.

Poppers are all the rage but not everyone likes the spicy heat. Baby sweet peppers are the perfect alternative; stuffed with creamy mashed potatoes and wrapped with Swift double smoked bacon. Dust with your favorite seasoning and bake till bacon is crisp.

The x-rays came back positive. Turns out I’ve got that hawg in me.
Every now and then, you gotta do it on ‘em. These are the best ribs I’ve cooked, and THAT’S official like a ref with a whistle. After years of funkin’ with the formula, I feel like I’ve cracked the code. One of the biggest revelations has been throwing down two distinct layers of seasoning way ahead of cook time. A layer of coarse salt, pepper, and garlic is so necessary before adding the sweetness. Shoutout to my man @showoff_bbq for sharing that tip at our @oklahomajoes shoot last year. Everyone loves sweet, saucy ribs…but that peppery, fundamentally-sound element sends them over the edge. Other guidelines include: use quality @swift__meats spare ribs, keep the temps close to 225F, wrap in foil for about 90 mins, and use @capitalcityco mambo sauce for the finale. There are many great ways to cook ribs, this comes down to personal preference. There’s no right or wrong way. Rib and let rib, you guys.
Bacon-wrapped pork tenderloin has been a go-to for me when we have company. I season and wrap with Swift double smoked bacon, then grill or pan fry till bacon is crisp and internal temperature is 145°. Brush with honey butter or honey mustard while it rests for 5-10 minutes before serving
