🌱 Our last venue will literally take you down under, as we are taking you with it into the cellars of Cureghem where hides ' Le Champignon de Bruxelles ' , a real underground urban farm where mushrooms grow by thousands ! 🍄 Let's meet our speakers ( a very diverse and interesting group, no really! ) 🌱 Hello back Nicolas Decloedt, one of our Soilmates founders and chef of fine dining / veggie restaurant Humus × Hortense. Let's taste all of the good things he has created for our visitors... 🍴 🌱 Psychologists Laurens Van Der Cruyssen × Adrien Hill are 2 of the minds behind the Osmos Network ; a design and development agency focused on transitions towards a sustainable future who believes that any change should be inclusive, adaptive and where possible self organizing. During their workshop, visitors will discover a new way to relate to soil through textures, sounds, colors,... ( a bit like synesthesia would do ) 🎶 🌱Olivia Angé is an anthropologist who's been working closely with farmers from the Cuzco area in Peru. She will talk about the Potato Poetry that has been recited for ages, showing respect from the farmers to Mother Earth ( the fertile soil, the potatoes,... ), through some audio visual projections. 🥔 🌱 Meet Maxime Willems, THE food labo guy from Flanders and founder of Proef ( a new culinary concept, kinda food tech facility dedicated to greater creations ). During his workshop you'll be using 'koji' , a mold classically used in Asia to create Saké & miso, and therefore create a new condiment using mushrooms as a starting point. 🍄 🌱 Boer Olivier is , as you could guess out of his name, a farmer ( boer means farmer in NL ) but with a sustainable approach to farming. He's going to give a talk on how he manages his soil while moving his coop around, through different patches and giving his chickens the opportunity to daily feed and wonder around on fresh grass. 🐔🥚 Rest in our comments ⬇️❗

🌱 Just one more week to go before our Soilmates' édition of this year! We are moving up to the capital, to three meaningful places in Anderlecht. If you wanna join us and partake in this incredible journey, this is how you should do ; 🌱 1. Go to our website and scroll down until you get to the program part. 🌱 2. Choose your starting point. We have three amazing venues ( the gardens from the Erasmus House, SMALA farming and Le Champignon de Bruxelles ), you just have to pick out where you want to start. You will get to all three of them, no worries. We just couldn't make you ALL start at the same point 😉 🌱 3. Click on " BUY YOUR TICKET " . Here, it might get a bit tricky but it's not really. Once you get to the buying part, we give you the opportunity to choose your route. We have four routes / programs, two in French and two in Dutch. So first thing, look up the language you wanna ' follow ' during the day. Once you've made up your choice, you have two parcours left. Just pick one of those two! Easy peasy! All are speakers are amazing, so whatever you choose, you're going to have a great day! 👍 🌱 4. Choose the number of tickets you need and follow through the instructions. That's all! You've made it! Now just wait for another week and we will see you next Sunday! PS ; We highly recommend people to move around with the bike. As it facilitates the access between our 3 venues, but also because it's the 20km of Brussels next Sunday and cars will be prohibited in certain parts of Brussels! 🌱 Last Sunday, Soilmates got together where it all started ; at le Monde des Milles Couleurs in Dikkebus. Together with a good bunch of this year participating chefs and speakers, we decided to create a new world. The one we wanted to live in, where the fertile soil would be cherished and protected, taken care of and loved,... Where hope was part of our community, cause that's what we are now.. Not only just a collective, but a community of like minded souls trying to be and to do better. 🌱 Through different talks and activities, we contemplated at our society now and looked for solutions we could undertake to change our world. We have hope, hope in our future, hope in the next generations,... We were moved by Olivia's story about Peruvian Potato Poetry ( yes, it's a thing ), we laughed hard at Benoit's comparison of love making and flowers, we felt Dries' passion for his veggies,... We all had a story to tell, we all listened,.. 🌱 As Alexandra ( one of our founders ) was telling us, there's a saying among the Buddhist religion that the next Buddha will not be just one person, but rather maybe a community ( from what Zen master Thich Nhat Hahn is saying, thanks @alexandraswenden ^^ ) ... And while it will clearly not be us, we are still willing to make the change! 🌱 If you want to, you can also be part of it! 🌱 Nog maar 2 weken tot de 2021 editie van Soilmates! Voor deze tweede editie vestigen we het collectief op 12 en 13 september in Brussel ( zoals we al hier op onze Instagram pagina goed in beeld hebben gebracht ). Wat mogen jullie verwachten van deze tweedaagse? 🌱 Zondag 12 September staat in de teken van kennis delen en het bezinnen rond de conditie van de vruchtbare aarde in de stad. Verdeeld op drie emblematische plaatsen in Anderlecht ; SMALA farming, de tuinen van het Erasmushuis en Le Champignon de Bruxelles ( in de kelders van Cureghem ), waar een aantal Soilmates Speakers de levende aarde een stemmetje geven, zelfs tussen het stedelijk beton. 🌱 Van 10 tot 18u zullen wetenschappers, kunstenaars, antropologen, filosofen, stadsarchitecten, boeren en chefs hun stem geven aan de levende aarde. 🌱 Plus que deux semaines avant notre edition 2021 de Soilmates ! Pour sa deuxième édition, notre collectif a décidé de s'installer à Bruxelles les 12 et 13 Septembre ( comme on l'a déjà bien mis en avant ici sur notre page Insta ). A quoi s'attendre de ce deux journées bien distinctes? 🌱 Le dimanche 12 septembre sera dédié à la transmission, au partage de connaissances et à la réflexion. Répartis dans trois lieux emblématiques d'Anderlecht ; SMALA farming, les jardins de la Maison Erasme et Le Champignon de Bruxelles ( dans les caves des abattoirs de Cureghem ), Soilmates apportera un éclairage sur notre rapport au sol vivant en territoire urbain. Tout cela à travers différents angles et interventions telles que des lectures, des performances artistiques, des projections, des workshops,... 🌱 Le lundi 13 septembre, une vingtaine de bouche ( restaurants, bistrots, cavistes, fromageries,... ) qui partagent notre philosophie activeront leurs fourneaux ; ils créeront de manière collaborative de nombreux ' soil dishes ', des plats qui représentent le goût de la terre. 🌱 Only two more weeks to go for the 2021's edition of Soilmates ! This year, we will organize a two days event in Brussels! ( which we have been explaining a lot here on our IG page ). What to expect ? 🌱 On Sunday 12th of September it will be all about sharing knowledge and reflection on the condition of the living soil in the city. Through three emblematic places in Anderlecht; SMALA farming, the gardens of the Erasmus House and Le Champignon de Bruxelles ( in the basements of Cureghem ). 🌱 From 10 am to 6 pm, scientists - artists - anthropologists - philosophers - city architects - farmers - artisans and chefs will give their voice to the earth through lectures - artistic performances - workshops and tastings. 🌱 Tonight we are asking ourselves ' How deep is our soil ' , which will be the thematic at our second venue - The Erasmus Gardens. There we will examine how our cultural imprints influence the relation between us ( humans ) and our soil. Thanks to our speakers, you will get to deepen yourself under the surface of our soil... Meet therefore ; 🌱 @oanabogdan__ ( day - by - day urban architect ) will give a talk about the link between cities and soil, seeing cities like organisms that need to be taken care of by creating a ' caring ' urbanism in order to reconnect with nature as well. 🏘 🌱 In need for a drink? Well, @carolinebaerten is there for you! We've seen her before, she is one of the founders of Soilmate and also the mixologist behind Humus x Hortense. What about a workshop around botanical drinks to elevate our soil as well as our soul? 🍸 🌱 Thanks to @olivierkummer who's a professional perfumer, you'll get to discover / smell / try out the fragrances of the soil. Put your nose to the test and let you be guided by the fragrances of raw materials from around the world, commonly used in perfumery. 👃 🌱 Blanche Magarinos - Rey is a lawyer from the Artemisia cabinet, a law firm providing support to nature & human rights defenders specialized in environmental law. Mostly giving legal representation in cases about the promotion and defense of biodiversity ( with an emphasis on agrobiodiversity ). She will gave an introduction on " Seed Law ". 🌾 🌱 Our microbiologist at this venue ( cause we also have one at SMALA farming ) is Sander Wuyts. Did you know that our bodies are colonized by thousands of microbial species, called microbiome? Well, he knows all about it and with a simple experiment he will bring the soil microbiome to life....🔬 🌱 But we have also another researcher on site : Marjolein Visser, from the ULB, who will hold discussion about agroecology and farming systems. 🚜 🌱 Raf Van Der Veken is our home guide, at the Erasmus Gardens, who wil narrate the history of the gardens themselves through philosophy and anthropology. 🌱 Only two reveals left for all our participating chefs! How excited are you getting? Cause we are clearly in the mood for food! 🌱 TARZAN ; What a change of scenery for @tarzancomptoir ! Imagine a dark dim lighted place, giving you the feeling you are eating just under the surface... Combined with weird background noises and some contemporary dancing... A four service dinner, entirely around veggies.. A mix of the senses with an incredible wine pairing ( but with a non alcoholic pairing as well, if needed). 🌱 TITULUS ; This incredible wine bar @tituluspictus will explain us the importance of terroir in wine making, using Chenin grape as the starter point in different wines. So 6 wines with 6 soil samples, to understand ( feel, smell, discuss ) the diversity in vineyard soils. Expect also some smaller bites made by Lyla Bangels @ephemeral.table , their new chef ( who specializes in sustainable cooking ). 🌱 SAVAGE ; @savage.restaurant is one of the latest hot spots from the city and we are happy they tagged along as well! Get ready for a 6 course menu, with a " moving aperitivo " served both under and above the ground level... Intrigued? So are we ! All made by chef @joelrammelsberg . 🌱 BRUT ; More into a nice lunch? Well this is the place to be on the 13th! 🌱 As our event is coming closer and closer, let's talk a bit more about our speakers. Tonight I'm taking you back to @smala.cooking.farming , our vegetables farm at the outskirts of Anderlecht. Here we will meet with a food forest teacher, a baker & a brewer, a herbal tea producer, a few farmers, two shinrin yoku guides and a microbiologist ! What a program! 🌱 Louis De Jaegher is a food forest teacher who will give us an introduction to food foresting. Starting with how we went from soil to forest, explaining how sustainable agriculture can help us maintain / safe our earth and discussing the role of ' voedselbossen' in the revival of our forests. 🌲 🌱 Fazia Small & Lucas Van Den Abeele will join hands in a workshop about bread, grains and beer. Imagine making sourdough bread while discussing beers from ' Drie Fonteinen ' brewery. 🥖🍺 🌱 Emilia Farfan is the herbalist behind ' Hierba Buena ' , a range of organic ( zero waste ) herbal teas. She has been working with SMALA Farming for a while now and will propose a workshop about all the benefits of herbs and flowers for our body... And our minds... 🫖 🌱 Farmers Dries Delanotte ( from @mondedesmillecouleurs , one of our founders ), Zofia Zaniewski ( the handy woman behind SMALA farming ) & Laura Matthys ( who is a bio engineer) will give us a garden walk through the site, while explaining the importance of regenerative farming. 👩‍🌾🧑‍🌾 🌱 Lena Van Der Bruggen and Priscille Cazin are our Shinrin Yoku guides for the day and they will guide you through the idea of " Forest Bathing " . Let's dive together into this old Japanese habit of immersing ourselves into the woods. ⛩🌳 🌱 Last but not least, hello back to Florian Lauryssen ! Who has been with us since our first edition! 🌱 Ready for a new reveal of our chefs? 🌱 Not 1, nor 2 but 3 restaurants of Schaerbeek are joining hands and creating an incredible event at L'entrepote ( which is a completely refurbished old carpentry shop, perfectly suitable for this event, with an urban veggie garden ) ; meet the teams from @chabrolrestaurant , @belgobon and @maloma.comptoir . They will provide a four service dinner, paired with some incredible drinks from @joran_cidrotheque , @ethylo_cocktailbar and Passion for Wine. Let's imagine together a " gastronomie vivante " where conviviality and fellowship is at its center. 🌱 Also, meet @albertbrussels . A little fine eatery with probably the best view of the center of Brussels. Shouldn't you know it, this gem is situated on the 5th floor of the KBR ( Koninklijke Bibliotheek / Bibliothèque Royale or " Albertine " as we people from the city center call it ) and will indulge you with a whole range of seasonal / local produces. From raw milk cheeses and charcuterie, to natural wines and gastrobeers, which creates a real " organic farm - to - fork " experience.
