@sarap_london may be closed atm but that doesn't mean it's gone. In fact, we on a world tour baby! Every so often I need to pinch myself 'cos when all the planets and universe align, things I could only have ever imagined come together. My name is Ferdinand Montoya, I was born in Davao City, Mindanao, Philippines. My parents are from Mindanao and my grandparents (on my mothers side) are Ilonggo from Iloilo and Negros. I am Filipino by blood and by birth. My name is Ferdinand Montoya, at the age of 5 after much sacrifice from my mother, we immigrated to Sydney, Australia. I grew up in a foreign land that adopted me and in return for its opportunities and education I fully embraced and adopted its way of life. I am Australian by naturalisation. My name is Ferdinand Montoya, at the age of 29, my wife and I moved to London to see and explore another side of the world and to pursue my passion for cooking. London is my home, it is where I have been able to both find and make a name for myself. I am British by way of opportunities and privileges that were only possible because of the giants who came before me, who's shoulders I now stand on. I am Ferdinand Montoya, founder of Sarap which at its core is a modern Filipino inspired restaurant concept that seeks to champion Filipino food, drink and culture through the lens of all those identities. It is a reconstruction of memories and experiences lived expressed through the food, drinks and hospitality. I am so grateful and feel so blessed to have been given this opportunity, thank you @greatbritishmenu and to everyone who took the time to message and comment. Your kind words have given me so much encouragement at a time where I need it most. It's energised me and rejuvenated my confidence which is so needed as I push to open our permanent home. This is just the beginning, onwards and upwards ✌️❤️

So I did a thing! This January we welcome one of London’s hottest culinary tastemakers to the stage, Sarap’s @budgie_montoya . As he moves between his former home at Heddon Street W1 and hopefully to a new space in Carnaby Street’s Kingly Court Budgie has agreed to not only bring one of London’s most exciting expressions Filipino food cooked over hot coals to 14 Bacon Street for 3 weeks only, but also curate this month’s wine case !! This is the first time we’ve managed to combine our wine subscription with food being served at our space, meaning it may be our most nuanced and considered collaborations yet.
