Game Changer Everyone needs a kick in the ass from time to time. Some bigger ones than others. Especially me. #tbt to 4 years ago and getting this game changer of a surgery. A Hip replacement is no joke but definitely woke me the fuck up to look after myself. Chefs work a lot. ALOT. But if we dont use our time off to exercise and move our bodies…. Our bodies will stop moving. Running, yoga, strength training, meditation or stretching. Make it part of your routine or don’t. It’s time for that, whether you like it or not. People don’t succeed on ideas alone. Irrefutable drive to execute even when it doesn’t make sense to others is what will guide you to first place. @rickrubin made it clear, you need to take accountability for timing (or lack of). @rwmckinlay produced this incredible dish with NZ scampi and wagyu at the Three Corners Dinner at @parisbutter last month. But what took me by surprise was how incredibly moorish burnt carrot tastes when executed with the right combination of flavours. New lamb a la carte on tomoro night once again showcasing @tamarack_farms whole animal…. Changing cuts daily to utilize the best bits n bobs and keep us on our toes…. Look away…… or don’t…..it’s delicious HAGGIS….. cheeky bit of info for you that you didn’t know you needed Historically, after the kill…..hunters would use up the offal, which went off first, using the cleaned animal’s stomach as a cooking bag. Minced heart, liver and lungs are bulked out with oatmeal, onions, suet, seasoning and spices before cooking.
