Biscuit Rotti, cousin of the North Indian Kachori, is a konkani style Kachori and one of the most sought after savoury snack in Mangalore. It serves as a perfect tea time snack. My mom makes the best biscuit rotti 😍😋👌. I got a chance to savor my mom's preparation after 3 years, when my hubby got it for self during his short visit to india during last year. Eagerly waiting to savor it - hopefully - during my visit planned for this year. Since I was craving for this badly, had to get the recipe from her to make this today.

For the dough preparation :
To a bowl, add 1 cup maida, 2 tsp fine rava, 1/2 tsp salt & 1 tbsp hot oil. Mix all the ingredients until it turns to a crumble. To this, add water little at a time to form a stiff dough. Cover and keep aside for 30 minutes.
For the stuffing :
In a bowl, add 1/2 cup bombay rawa, 2 tsp freshly grated coconut, 2 tsp chilli powder (depending on your spice level), 1/2 tsp salt, 1/2 tsp sugar, mix well and keep aside.
Heat a pan over medium heat, to this add 3 tsp oil, 1 tsp mustard seeds, 1tsp urad dal, 1/4tsp asafoetida, 15 curry leaves, and fry until dal turns golden brown.Transfer this mixture into the bowl.
Frying the biscuit rotti :
Add in the oil in a wok on medium for frying.
Divide the dough into equal lemon size balls. Press each dough ball with a rolling pin to make a 2 inch diameter circle. Add about two teaspoons of stuffing in the center. Bring the edges of the dough together and seal it tightly. Press and Gently roll the kachori with a rolling pin to get a medium thickness kachori.
Slide each kachori in the hot oil. Fry on a low-medium flame till the kachoris turn golden.
