Our depth in the plantbased tasting menu @humushortense is created by umami rich sauces which simmered for 24h and by year-long fermentation processes of homemade shoyu, miso and koji.
It is easy for a chef to reach high umami levels in the menu by using animal ingredients.
However, it is so much more challenging (and satisfying) to attain the same richness 100% plantbased 💪🏻.
