Dahibara Aloodum Ghuguni , the true love of every Odia 🫶🏻
Though am little late , here presenting our favourite Dahibara Aloodum Ghuguni , a delicious combo relished by all Odia and non-Odia people .
Carrot Kheer/ Gajar Kheer / Gajar kheeri with jaggery
When fresh and juicy carrots are abundantly available in the market these days I thought to make some delicious and creamy carrot kheer on our special day. It’s an easy, quick and sugar free dessert.
Ingredients

1 tbsp ghee
10 cashew
1cup carrot(grated)
4 cup milk
1/4th cup jaggery
1/4th tsp cardamom powder
2 tbsp pistachios
1/2 cup milk powder
Process
✍🏻In a large pan heat 1 tbsp ghee and fry the cashew nuts and take out . And in the same pan add 1cup carrot and sauté for 5 minutes till the carrot becomes red in colour and the water dries up .
✍🏻In another kadhai add 4 cups of milk and bring it to boil on medium flame.
✍🏻Add the carrot to the milk and mix . Stir occasionally the milk-carrot mixture for 15 minutes till the milk reduced to half.
✍🏻 Now add 1/2 cup milk powder and mix well . Keep it on the flame for another 5 minutes and keep stirring.
Continue to boil for 10 minutes, or until milk thickens and turns creamy.
✍🏻Now add a pinch of salt , 1/4 tsp cardamom powder, fried cashew nuts and mix well.
✍🏻Switch off the flame and add jaggery to the kheer and mix well.
✍🏻Serve carrot kheer hot or chilled garnished with pistachios.
