Smoked at 250 degrees until 175 internal temperature, then made a foil boat and cooked it until 195 internal temperature. Then rested it overnight at 165 degrees on the Traeger. Loaded up the buns with chopped brisket, thinly sliced sweet onion, pickles and bbq sauce.
