Super Easy Vegan Pasta by

Ingredients:
250g dried pasta - I used pappardelle (the amount of sauce could take more pasta if you want it!)
1 large onion (or 2 small)
5 garlic cloves
250g vegan meaty mince (I used
@futurefarm and highly recommend)
1/2 tbsp smoked paprika
1 - 1.5 tsp cayenne pepper powder (add more if you want it spicyy)
1 tbsp soy sauce
1.5 tbsp tomato purée
1 tin tomatoes (400g)
1 tsp Italian herbs, 1 tsp oregano, 1 tsp basil
1 tsp veg stock mixed in hot water (I used approx 550ml total)
2 tbsp nooch (nutritional yeast)
60g of grated vegan cheese (I used
@violife_foods “epic mature” cheddar block)
Fresh basil to finish
- Fry the onion until softened in oil
- Add the chopped garlic and fry in a lil s&p
- Add the vegan mince and fry further
- Add the smoked paprika, cayenne pepper, soy sauce and tomato purée and fry for a couple mins
- Add the tinned tomatoes, all the dried herbs, stock with half of the water and let that heat up with some s & p to taste
- Once it’s hot add the pasta, and add any water needed to *only just* cover the pasta (you can always add more water later, we don’t wanna drown the pasta and make pasta soup 😎)
- Cover and let it cook on a low heat whilst occasionally stirring and adding any more water as necessary
- When the pasta is al dente add the vegan cheese, nooch and fresh basil
- And ya done! Enjoy with some vegan Parmesan!
