High-Protein, B12 & Iron Avocado White Bean Sandwich by @cookingforpeanuts ! 🥪⁣ ⁣ Check out Nisha's incredible recipe below:⁣ ⁣ ✅Makes 2 to 3 sandwiches⁣ ✅Ingredients:⁣ 1 large avocado, cut into about 1-inch pieces⁣ 1 (15-ounce) can white beans, drained and rinsed⁣ 1/4 cup diced red onion⁣ 1 tablespoon avocado or olive oil⁣ 1 teaspoon sriracha or to taste⁣ 1 tablespoon fortified nutritional yeast⁣ 1 small garlic clove, or ½ teaspoon garlic powder⁣ Juice and zest of one lime⁣ Salt & freshy ground black pepper to taste⁣ 1 cup leafy greens⁣ 4 to 6 slices bread⁣ ✅Optional:⁣ 1 mini cucumber, thinly sliced lengthways⁣ ✅Instructions:⁣ ✅(Optional: soak the red onion in water for 10 minutes if you prefer them milder.)⁣ Add the avocado, white beans, red onion, avocado oil, sriracha, and nutritional yeast to a medium bowl. Grate the garlic into the bowl using a microplane or fine grater. Add the lime zest, and juice. Mash until the desired consistency. Season with salt and pepper.⁣ ✅Place the leafy greens on a slice of bread. Top with the desired amount of avocado-white bean mash. Add the cucumber slices, if using. Roasted Potatoes, Broccoli and BBQ Chickpeas by @plantbasedrd ! Check out Catherine’s amazing recipe below: Roasted Potato Salad w/ BBQ Chickpeas 1lb of Yukon gold potatoes, cut into 3/4 inch chunks 1/2 tsp cumin seeds 1 tsp smoke paprika 1/2 tsp dry basil 1/2 tsp dry oregano 1/2 tsp ground coriander 1 tsp garlic powder 4 cloves garlic, crushed 1 small red onion, 1/2 roughly chopped and the other 1/2 diced 1 head of broccoli, cut into florets 2 tbsp avocado oil or preferred high heat oil 1, 15 oz can of chickpeas, rinsed and drained 1/4 cup barbecue sauce Salt and pepper to taste Tahini Sauce (optional) 2 tbsp tahini (I used @soomfoods ) 3,340 Juice of half a lemon 1/2 tsp dry dill 1/2 tsp onion powder Pinch of salt or to taste 20 2-3 tbsp of water Preheat oven to 425F. Fill a large bowl with cold water. Add in your cut potatoes and allow them to sit for at least 10 minutes. Dump the water and dry the potatoes with a cloth. Dry the bowl and add the potatoes along with the rest of the dry spices and a pinch of salt and 1 top of oil. Toss to mix and spread out on your baking tray then bake for 15 minutes. Add your broccoli, chopped onion, 1-2 tsp of oil, 2 cloves of crushed garlic and a generous pinch of salt then toss to coat. Flip the potatoes then spread the broccoli out on a separate tray or the same tray with the potatoes. Place the tray back in the oven for another 15 minutes. Dry your chickpeas, then warm the remaining oil in a pan and add your remaining onions with a pinch of salt and saute till soft. Add and sauté the remaining garlic then add in the chickpeas and stir-fry for an extra 3-5 minutes until seared. Add the barbecue sauce and simmer to thicken for 3-4 mins. Make your tahini sauce by combining the remaining ingredients in a bowl then adjust the consistency with some water until the dressing is creamy. Chili Oil Noodles by carolinagelen! 💥⁣ ⁣ Check out Carolina's quick recipe below:⁣ ⁣ Ingredients (2 servings)⁣ ⁣ 4 garlic cloves, minced⁣ 1 teaspoon chili flakes⁣ 1/2 to 1 teaspoon cayenne⁣ 1 teaspoon caraway seeds⁣ 1/2 teaspoon black pepper⁣ 2 tablespoons soy sauce⁣ 2 teaspoons rice vinegar⁣ 2 scallions, thinly sliced⁣ 1/4 cup finely chopped parsley, or about a handful whole parsley leaves⁣ 1/4 cup neutral oil, such as avocado oil, sunflower seed oil, grape seed oil, etc.⁣ Salt as needed⁣ ⁣ 2 servings of rice noodles of choice, fully cooked⁣ ⁣ Instructions⁣ ⁣ 1. Heat the oil in a small pot or saucepan on medium heat for 3-4 minutes, or until sizzling hot.⁣ ⁣ 2. Add the remaining ingredients, besides the noodles to a heatproof bowl. Open Faced Smashed Chickpea & Avo Melt by @thevegansara ! 😋⁣ ⁣ Check out Sara's comforting recipe below:⁣ ⁣ 🌱What you need: 1 can of chickpeas (15 oz rinsed & dried), 1/2 cup red onion finely diced, 1/4 cup fresh herbs finely chopped (I used parsley & dill) 1 mini cucumber finely diced, 1 garlic clove grated, 2 tsp red wine vinegar, 2 tsp Dijon mustard, 3 T vegan Mayo, 1 T sweet pickle relish, kosher salt/pepper to taste⁣ ⁣ 🌱For 1 sandwich: 1 slice of toasted sourdough, 1/2 avocado sliced, 2 slices of tomato, 2 slices of vegan mozzarella. Toppings: drizzle of olive oil & extra herbs⁣ ⁣ Salad approx 2-3 serving⁣ ⁣ 🌱In a mixing bowl, mash chickpeas till flakey using a potato masher/back of fork⁣ 🌱In a small dish grate garlic into vinegar. Let sit 2 min⁣ 🌱meanwhile combine the rest of ingredients, and garlic/vinegar, salt/pepper to taste⁣ 🌱Brush bread with olive oil, toast till golden⁣ 🌱construct sandwich: layer sourdough with sliced avocado, tomato, & vegan mozzarella. Super Easy Vegan Pasta by @veganbrownting ! 🍝⁣ ⁣ Check out Abby's lovely recipe below:⁣ ⁣ Ingredients:⁣ 250g dried pasta - I used pappardelle (the amount of sauce could take more pasta if you want it!)⁣ 1 large onion (or 2 small)⁣ 5 garlic cloves⁣ 250g vegan meaty mince (I used @futurefarm and highly recommend)⁣ 1/2 tbsp smoked paprika⁣ 1 - 1.5 tsp cayenne pepper powder (add more if you want it spicyy)⁣ 1 tbsp soy sauce⁣ 1.5 tbsp tomato purée⁣ 1 tin tomatoes (400g)⁣ 1 tsp Italian herbs, 1 tsp oregano, 1 tsp basil⁣ 1 tsp veg stock mixed in hot water (I used approx 550ml total)⁣ 2 tbsp nooch (nutritional yeast)⁣ 60g of grated vegan cheese (I used @violife_foods “epic mature” cheddar block)⁣ Fresh basil to finish⁣ ⁣ - Fry the onion until softened in oil⁣ - Add the chopped garlic and fry in a lil s&p⁣ - Add the vegan mince and fry further⁣ - Add the smoked paprika, cayenne pepper, soy sauce and tomato purée and fry for a couple mins⁣ - Add the tinned tomatoes, all the dried herbs, stock with half of the water and let that heat up with some s & p to taste⁣ - Once it’s hot add the pasta, and add any water needed to *only just* cover the pasta (you can always add more water later, we don’t wanna drown the pasta and make pasta soup 😎)⁣ - Cover and let it cook on a low heat whilst occasionally stirring and adding any more water as necessary⁣ - When the pasta is al dente add the vegan cheese, nooch and fresh basil⁣ - And ya done! 🧀 This Cheese recipe will impress even cheese lovers!🙌🏻⁣ ⁣ Cheese:⁣ 75g unsalted cashew nuts⁣ 0,5 cup plant milk⁣ 4 tbsp corn starch⁣ 2 tbsp nutritional yeast⁣ 1 tbsp lemon juice⁣ 1 tbsp olive oil⁣ 0.5 tsp salt⁣ 0.5 tsp garlic powder⁣ ⁣ Topping:⁣ Dried basil⁣ ⁣ Directions:⁣ 1. Add all cashew cheese ingredients into blender or food processor and blend until smooth.⁣ 2. Pour the mixture into a pan and heat up. Make sure you stir constantly. After a few minutes it will turn into a thick paste.⁣ 3. Transfer the paste into a suitable tupperware and even out.⁣ 4. Refrigerate for 1 hour.⁣ 5. Then sprinkle some dried basil on a plate.
