I am obsessed with these COTTAGE CHEESE COOKIES. 🍪 They are high in protein, gooey and so easy to make! I’ve made 5 batches in the past two weeks and we’ve all loved them... including Isaac (who isn’t a fan of cottage cheese)! 🙌 Here’s the recipe: 1 cup large curd cottage cheese (I used @good_culture ) ¼ cup pure maple syrup 1 tsp vanilla 1 cup almond flour 2 Tablespoons melted coconut oil ½ cup vanilla protein powder ½ cup chocolate chips + more for topping 1️⃣ Preheat oven to 350°F and line a baking sheet with parchment paper. 2️⃣ In a blender, add the cottage cheese, maple syrup and vanilla. Blend on high until smooth. 3️⃣ In a mixing bowl combine almond flour and protein powder. Add the coconut oil and cottage cheese mixture. 4️⃣ Stir until combined. Fold in the chocolate chips. 5️⃣ Scoop dough onto a prepared baking sheet using a medium cookie scoop and use your hands to flatten the cookies just a bit so they’re in a cookie shape. You can also roll the cookie dough into a ball and then use your hand to flatter for a more uniform shape. Add a couple more chocolate chips on top of each cookie. 6️⃣ Bake for about 15-16 minutes or until the bottom of the cookies are golden brown. Let cool and enjoy! Another lightened up Girl Scout cookie treat for you = APPLE SAMOAS. They’re such a fun way to enjoy the coconut chocolate combo and I love the crunch (and extra fiber) from the fresh apple. Added bonus = Olivia was obsessed with these so I know your kiddos will enjoy them too. Here’s how to make them: 1 apple (Honeycrisp are my fave) ⅓ cup unsweetened shredded coconut 3 tbsp almond butter or cashew butter ½ tbsp maple syrup 2 tbsp chocolate chips + ½ teaspoon coconut oil 1. Cut apples into ¼-inch thick slices and core. I only used 3 slices! 2. Mix together coconut, almond butter and maple syrup until fully combined. 3. Place mixture on top of each apple slice and place on parchment paper. 4. Melt chocolate chips with coconut oil. Drizzle over each apple and place in freezer until firm, about 5-10 mins. I’m assuming leftovers will keep in the fridge for a day or two, but we didn’t have any leftovers. 😅🤣 PS: I have another version of these apple samoas (with date caramel) on my site! I did one of her challenges years ago and I’ve been making this treat on and off ever since. It’s the perfect when you’re craving something sweet and also need extra protein to hit your goal. ・1 scoop whey chocolate protein powder (I used @cleansimpleeats brownie batter, code EBF will get you a discount) ・1 tsp cocoa powder ・¼ tsp baking powder ・1-2 Tablespoons water 1️⃣Combine all ingredients in a bowl and microwave for 20-30 seconds. Edges should feel cooked but the top/center will still be doughy/wet. You may have to play around with the time and your microwave settings to get the perfect consistency. You definitely don’t want to overcook or it will be too dry. Comment “avocado” and I’ll DM you the full recipe + macros for my creamy AVOCADO EGG SALAD. 🥑🥚 It packs 13 grams of protein per serving and is delicious served over toasted sourdough, in a lettuce wrap, over a bed of greens or with crackers. Here is how to make it: ⬇️ • 4 hard boiled eggs grated or finely chopped • ½ ripe avocado mashed • ½ Tbsp finely chopped dill pickle • ½ Tbsp chopped scallion white part only or chopped red onion • ½ Tbsp lemon juice • ½ tsp dijon mustard optional • ½ tsp ground pepper • ⅛ tsp fine sea salt plus more as needed • 1-2 Tbsp fresh chopped parsley or dill for garnish • lettuce leaves bread or crackers, for serving 1️⃣ Stir: Combine all ingredients in a bowl. Top with fresh herbs and serve. 2️⃣ Store: Store salad in an airtight container in the refrigerator. The salad will keep for 3-5 days.
