Cheesecake Stuffed Chocolate Eggs 🐣🐇🐥🌷 This was a FUN little Easter project that turned way out better than I had hoped! I LOVE making deserts and "candies" for holiday celebrations at home because it's a SUPER FUN project, and I know EXACTLY what ingredients go into them. Take a bit of time to create some holiday memories in the kitchen with the people you love this weekend... I know the kids REALLY love making their own treats! ➡️Rachel's tips: You're going to need an egg-shaped silicon mold to create these chocolate eggs. I just hoped on Amazon and found several with fast shipping. Rachel's Homemade (copycat) Aussie Bites Completely packed with energy through complex carbohydrates and healthy fats, along with an impressive amount of fiber, too! These are EXCELLENT for someone who is active, training, intense sports, physical job, or maybe someone just trying to get a big dose of nutrients in a little bite that tastes like a treat. As long as your kids aren't allergic to nuts, I think these are an AWESOME grab-and-go breakfast or snack for them (and you) alongside some protein such as a boiled egg. They look like bite-sized lil' mini-muffin and are made of various seeds, ground nuts, chopped dried fruits, and a bit of healthy oil. Beetroot-Dyed Deviled Eggs I've been in a 40+ year-long love affair with deviled eggs, and I don't think we'll break up any time soon. For me, they're such a classic treat that I go out of my way to make on holidays and special occasions. I've experimented a lot the past few years with different variations, and I thoroughly enjoy them all. Deviled eggs have become sort of a "food craft project" in our family, and we have a lot of fun adding different colors, textures, toppings, and (I dare say) designing them. I hope you try this Beet-Dyed version with your family and friends this spring, as the color adds just the bright pop we need after many muted winter months. If it's sunny and warm near you, enjoy it! This has been a very long dark winter for us and I'm so ready for spring flowers and a little sunshine on my face. Our Asparagus Quinoa + Bacon Spinach Salad is perfect in every way! We have lots of greens that are all in season here shortly, with added quinoa to create a heartier, nutty appeal. Thai Inspired Avocado Salad 🥑🥕🥬 Crunchy + Tangy Veggies & Creamy Avocado slices + Zesty homemade Dressing = Unbelievable Combination! While this Salad Dressing is practically drinkable (it's just *that* good!), 😋 Don't drink it, but instead double up the recipe and use it for other salads and vegetables! A GOOD dressing recipe adds a lot of flavor to everything! Cabbage is a very underrated vegetable. It's very LOW in calories, HIGH in nutrients and fiber. Definitely a vegetable that we should all be eating more of! Chocolate Yogurt-filled Easter Eggs makes about 12 eggs Ingredients: *Easter Egg Candy Molds 1 1/2 cup high-quality dark chocolate chips 4 Tbsp raw honey 1 tsp vanilla extract 1 1/2 tsp turmeric powder 2 cups of Greek yogurt 4 tbsp almond or cashew butter Instructions: Melt the chocolate for 30 seconds in the microwave or in the stove top in a double broiler. Using about 70% of the total amount, brush each mold generously with the melted chocolate. Try to make an even coating. Place in the freezer for 10 minutes. Keep the remaining chocolate warm to stay liquid. In a bowl, whisk the yogurt, vanilla, and honey. Then, add just 1/2 cup of that yogurt mixture to a separate small bowl. Add the turmeric and almond/cashew butter and whisk very well to combine. Spoon the honey/yogurt mixture into the chocolate eggs, then blobon the turmeric 'yolk'. Place back in the freezer for 5 minutes. Pour over the remaining melted chocolate and use a small spatula spread to cover evenly the egg molds. Store in the fridge and enjoy within 4 days. Chicken Ranch Spaghetti Squash Ranch dressing, the creamy, herby goodness, is a pleasure we can usually all agree on at my house. Oh, that indulgent, rich ranch flavor is absolutely INCREDIBLE dolloped on top of hot spaghetti squash noodles. Add some crispy ranch flavored chicken pieces…it’s all I could possibly want in a meal. We get extra fiber + nutrients here, thanks to this incredible noodly squash. Great source of protein, too, thanks to the chicken + Greek yogurt. Eggs + Smoked Salmon in Green Rings 🍀 One of our favorite breakfast ideas for so many reasons! These have such a beautiful presentation, and seem like you spent a ton of time making them... but they really couldn't be simpler! Also, every aspect of this idea is loaded with nutrition + flavor! Customize and mix-&-match to your preference! Ingredients 1 or 2 green bell peppers free range eggs for each ring sea salt and freshly ground pepper to taste 🙋optional toppings: fresh dill, fresh chives, smoked salmon, avocado slices, and/or sliced red onion. Instructions: Slice the bell peppers into ½ inch rings. Use a sharp knife to make clean cuts (to better hold the egg in place). Remove all of the white inner flesh and seeds. Heat the skillet on medium heat and coat with non-stick coconut oil cooking spray. Let the pan heat up before adding food. Place the pepper rings in the middle of the pan. Allow the rings to cook and brown lightly before adding the egg. Turn the rings over a few times so both sides cook evenly. Very gently add one egg to the middle of each bell pepper ring. Cook over low heat until yolks are to your liking and egg whites harden and are no long translucent. Gently add your optional toppings during the last 2 minutes of cook time. Spray the bottom of your spatula with non-stick coconut oil spray. Slide it underneath pepper ring.
