Bucatini all'Amatriciana A classic Italian pasta dish made with Guanciale (Guancia is Italian for “cheek,” and guanciale is cured pork jowl) Plump Tomatoes, grated Pecorino cheese, salt, peperoncino , and a bit of white wine..no garlic and no onions! If you can't find guanciale you can use pancetta..if you are not able to find these two delicious Italian cured pork products in your neighbourhood, I strongly recommend that you move to a different neighbourhood.😂 Ingredients for four Pasta 500 gr Pomodori pelati 400 gr Guanciale 200 gr White wine 60 ml Pecorino romano Olive oil Salt Peperoncino optional. Start by preparing the sauce...take the guanciale, remove the pork rind and cut it into slices about 1 cm thick and then into small strips about (1/2 cm) wide. Heat a drizzle of oil in a stainless steel skillet, add peperoncino and the guanciale cut into strips. Brown over low heat for 7-8 minutes until the fat has rendered and the meat is crunchy. Transfer half the guanciale to a plate and set aside. Pour in the white wine, turn up the heat and let it evaporate. Add the peeled tomatoes into the pan, breaking them up with your hands directly into the cooking liquid...continue cooking the sauce for about 20-25 minutes. Taste the sauce and adjust for salt if necessary. Fill a large pot with water...as soon as the water boils... add salt...add the bucatini ( or spaghetti). When the pasta is about 1 minute or 2 from the al dente stage....transfer directly to the sauce in the pan. Quickly mix it well with the sauce...pour a little of the pasta water to continue cooking. When the pasta is ready...remove the pan from the heat and add a handful of Pecorino..continue mixing to create a creamy sauce. Serve with a generous sprinkle of grated pecorino cheese..some of reserved crispy guanciale.
