Chanukah starts this Sunday so obviously for anyone with even the vaguest Jewish connection it’s the perfect excuse to eat ALL of the fried foods! Obviously aside from sufganiyot (Chanukah - or Hanukkah, they’re both correct - donuts) that means latkes - wonderfully fried patties of shredded potato. But, if you fancy something a bit lighter than the classic potato version, I need to point you in the direction of my Cauliflower Latkes. When @bbcfood asked me to create a latke recipe with cauliflower I was worried they’d turn out like some sort of health food substitute, but, actually, I think I love these just as much as the real thing! Eaten right out of the pan they’re light, crispy and golden, the cauliflower sweetening and caramelising while they cook. Celebrating the festival or not you need to try this recipe - served with soured cream spiked with a little lemon juice and good good dousing of your favourite hot sauce they’re also what I’m craving for lunch today.
