Green bean casserole 💚
Some people might recognise this best as a thanksgiving side, but it is satisfying, comforting and packed full of veg so it makes a perfect vegetarian main any time.
Put a couple of packets of green beans, a punnet of chopped chestnut mushrooms and 2 finely sliced shallots in a baking tray with a little oil and a big pinch of salt, and roast for 20 - 25 minutes or so at 190c until the beans start to blister.
Meanwhile put a pan on the hob and melt 2 tbsp butter with 2 tbsp plain flour to make a roux. Cook that off for a few minutes and slowly whisk in 1 cup milk and 1 cup double cream. Add a teaspoon each bouillon powder, onion powder and garlic powder, then half a cup of grated cheese (I used mature cheddar). Continue to simmer and whisk until it thickened.
When the vegetables are done, mix them into the sauce and arrange in a dish. Top with a handful of breadcrumbs, some extra grated cheese and I added some shop bought crispy onions then finish under the grill for a few minutes until crispy.
Delicious creamy, oniony greens. I’m yet to serve them to someone who isn’t surprised at just how good they are 😊
