Scallops, sweet corn purée, pickled cucumber, brown butter, chorizo oil and a vibrant herb oil. This dish nearly didn’t make it to the feed because I was being nit-picky. I’m feeling so burnt out and uninspired that i’m finding it difficult to be positive about any of my cooking lately. Lets not even talk about Instagram’s constant altering of this platform and the impact it’s having lately. Anyway, I think i’m going to try and revive my energy and inspiration stores over the next few weeks, maybe go back to cooking really simple dishes I love.
