Lemon Blueberry Loaf: • 1½ cups all-purpose flour • 1 teaspoon baking powder • ¼ teaspoon baking soda • ¼ teaspoon salt • ½ cup unsalted butter, softened • 1 cup granulated sugar • 2 large eggs • ½ cup plain yogurt (or sour cream) • 1 tablespoon lemon zest • 2 tablespoons fresh lemon juice • 1 cup fresh blueberries
Glaze:
1 Cup powdered sugar
Juice of half of a lemon
Splash of vanilla
1 tbsp of milk or more depending on the consistency you prefer
Instructions: 1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan. 2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. 3. In a large bowl, cream together the softened butter and sugar until light and fluffy. 4. Beat in the eggs, one at a time, until well combined. 5. Mix in the yogurt (or sour cream), lemon zest, and lemon juice until smooth. 6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. 7. Gently fold in the blueberries until evenly distributed throughout the batter. 8. Pour the batter into the prepared loaf pan and smooth the top with a spatula. 9. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. 10. Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
